Just a note of caution - college and universities names/logos are typically copyrighted and/or trademarked and you need a license to do them. Just like the NFL, NBA, NHL, MLB, John Deere, Harley Davidson, Disney, etc - the list goes on and on. If they find that you created and sold items with their copyright or trademark on it, they would most likely send you a cease and desist letter. However, I do know of businesses that lost everything because of a copyright/trademark issue.

I see vendors at craft shows and on the internet with copyrighted or trademarked items for sale all the time - some will probably never be caught, but for those who are, it can become a nightmare.

Yes, You will want to check with the University. You can also sell though someone that has the licensing and they just get a cut. But you want to be very careful with the copyright teams and logo.

I might be wrong, but I think you have to have every product approved by the licensing department in order to sell it - even if you have a license. They want to make sure there aren't any "undesireable" products bearing their name

That is correct FireRose. They need to approve the design, color, etc.. Very picky too.

What about sororities and fraternities are those usually copyrighted? I was just approached by a sorority last night about making a decal with the sorority on it. Now I'm curious now

I have done the greek letters, and one logo with a permission letter. I do know the logos are copyrighted.

Ok. What about this (can't seem to find answer) I know, for example, the Houston Texans - the name and the image is copyrighted. Is it copyrighted in their font or all together? As well can you give gifts and accept donation or just don't do it all? I have a family friend that wants a rhinestoned texans image as a decal.

There are thousands of webpages on copyright and copyright laws. These are personal choices only you can make about whether to make these or not. I don't want to blow you off, however, I am not a lawyer nor am I in any position to give any kind of OK to make anything trademarked or copyrighted.
